Happy Halloween!


This year, the weeks leading up to Halloween have not been full of pumpkin flavored foods and creepy treats, pumpkin carving, or trick-or-treaters. But instead I lived through my first hurricane, Frankenstorm Sandy, wore my skeleton necklace to work, drank my hot coco out of a snowman mug and called it a day. Tonight, I’ll curl up on the couch with my little family, eat a warm meal and watch a scary movie. Just the type of Halloween I’m looking for, simple, quiet and calm, just like everything else in my life lately.

I hope you all enjoy your Halloween, in whatever way you will celebrate.

Farewell Sandy


Sandy, as the first hurricane that I’ve lived through, you sure did make your mark. Showing your first signs on a Friday, moving in throughout the weekend and extending your stay through Monday and Tuesday, you just wouldn’t go back home to where you belonged.

You visited many of my favorite OBX places, ripping apart our favorite fishing pier, destroying our old Bonner Bridge and parts of the historic Mirlo Beach and Hatteras Island, but I thank you for leaving my little home safe and dry. And you didn’t even take my power, not once. I would have at least given you that, had you wanted it. I would have traded an hour of two of power to save the Avalon Pier, but you didn’t ask me. I guess you didn’t have time, though you spent close to a week at my home before heading north to visit my friends in Philly and NYC. Please be as kind to them as you were to me.

Oh Sandy, you frankenstorm, did you know that Halloween was my favorite holiday and that during your visit I burned a frankincense candle just for you?

I dream of the simple life, not this over complicated thing I find myself in lately. My heart in fact burns for it. I become antsy with desire to dig into the ground and build a garden all my own, to find the Blue Ridge, and build a home.

EGG DROP BOK CHOY SOUP // RECIPE



Fall means a few things to me: cool nights with warm wool socks and delicious homemade soups. Last night encompassed both of these things. My co-worker, Amy and I recently became a member of a localcrop share, splitting a plentiful box of weekly veg* from Somerset Farms.Saturday was our first pick up where we delighted in butternut squash,eggplant, field greens, bok choy, garlic, and radishes. Here’s a photo of my share:

Being a part of a CSA not only forces me to eat more veg* (and eat it on a daily basis), but it also forces me to get creative in my cooking. Ilove to cook, but by no means am I overly skilled in the kitchen. Some people have their Mom’s and Grandma’s to thank for their skills, growing up with matching aprons and learning secret family recipes, but as an accident pronechild (I had my fingers slammed in a door or dislocated at least once a month),I wasn’t often allowed in the kitchen. Thanksgiving was the rare occasion where Mom would station me in front of the stove to stir the gravy. And to this day, I still make a mean gravy, but slicing, chopping, boiling, frying, not exactly my expertise. That is until college, when Thursday night “family” dinners withmy roommates consisted of empting the contents of our fridge into elaborate recipesand delicious creations. This is where I learned how to chop a carrot without chopping off a finger, that accidents happen less often with sharp knifes than dull, andthat practically anything (and I mean anything) can go in to a stir-fry (I thank Molly for that one). I learned to cook not from bloodline family, but from the family of friends I made in school. And, in fact, I am still learning each and every time I cook a meal with someone. That's what cookin's all about!

Last night I relished in these memories as I made the most delicious egg drop bok choy soup. This soup is what I like to describe as chicken noodle soup with an Asian flair. Adam even liked it, which was rare considering it has mushrooms in it!


Ingredients**

Egg Drop soup packet (the yellow one)

4 ½ cups of water
2 cups reduced sodium chicken stock
8 small mushrooms, chopped
1 head of bok choy, sliced (See picture below for the size Iused. Not really a great picture, but I used only one of those heads, and that is a butternut squash next to it for comparison.)
Red pepper flakes
¼ box Thai noodles (I used Thai Kitchen Stir Fry Rice Noodles Orginal Pad Thai)
A splash of soy sauce
1 egg, whipped

Combine egg drop soup packet, water, chicken broth,mushrooms, bok choi, red pepper flakes bring to a boil. Once boiling addwhipped egg. Follow the same directions as egg drop soup packet (The onlydifference is I have added more water/chicken stock and other ingredients).

Prepare thai noodles as directed on box. Add to above. Add asplash of soy sauce, as desired.

Eat and enjoy!**

If you don’t like spice, tone down the red pepper flakes.




*Vegetable(s): I don’t abbreviate many words in myvocabulary, but you can be sure that vegetable is one of the few I do. Mostly I’ll use veg(s) and veggie(s) as my replacement.

**Please note my recipes may not be exact, as I mentionedearlier I am not a professional chef and I often cook based on appearance,taste, smell or desire - - meaning I never follow a recipe exactly.

Dream a Dream of Rough Draft Farmstead

Throughout the days I find myself dreaming of a different life. One that’s easier on the mind, but harder on the body. One that involves continuous sunburns and fingernails full of dirt. One where waking up at the crack of dawn to a rooster crowing is mundane and a hard day is defined not by emails, commutes, and coworkers, but rather by how frozen the ground is under your feet and how deep you have to dig.

To me this dream is only a flickering light in the distance. Something that keeps me going, but doesn’t fuel my fire. I hope to one day achieve this dream by opening an eco-lodge and farm. To feed my guests freshly grown produce from the backyard. For now though, I am living through the dreams of Hannah and Jesse, two young farmers in Kentucky.

Hannah and Jesse were recently forced off their farm and left homeless. All the money they had invested in their dream had been stripped from their hands, but they have been given a second chance.

Relocating to Bugtussle, they started over again with Rough Draft Farmstead. Read more about their story here. They are currently seeking donations to build a 750 sq. feet off the grid cabin. I don’t personally know Hannah or Jesse, nor do I remember how I came across them on this worldwide web, but since finding their story I’ve been dedicated to helping them achieve their goal.  Maybe I’m gullible and am easily convinced by others to invest money in people I barely know, but I’d blame it more on jealousy. One day I will be Hannah and Jesse and one day I will ask for help as they have from people like you and them.

Plus, I think If I truly did know them, I’d be their best friend and them mine.

Help them reach their goal, spread their story, and share in their dreams because sometimes you must live through others before you can build on yours.

Follow-up to My Shoe Obsession

Thanks for all the votes on My Shoe Obsession. Oddly enough most of you voted for the Moss Botas, which I decided to send back. (Sad face) My heart was torn between the Indo Classics and Wine Corodones and because "I am NOT an Aztec" (Thanks for that amazing comment Paige.) I went with the Wine Corodones. Which was in fact fitting because I bought a case of two buck chuck less than a month ago and it's basically gone. I guess that makes me a wino in my Wine Corodones.
